While a fresh cup of coffee (or three) has been part of the morning routine of the average American for decades, new and creative coffee options have exploded in popularity in recent years.

Traditionally, coffee beans have been ground, and then brewed and served piping hot. However, Millennials have rapidly shifted the coffee landscape with their preference for coffee brewed and served cold.

In fact, 66% of US Millennials drink cold brew coffee compared to 34% of GenX, according to Mintel.

One of the biggest trends in cold brew coffee is to infuse it with nitrogen gas. This drink is now commonly referred to simply as “nitro cold brew”.

A few years ago, nitro cold brew could only be found in a handful of specialty coffee shops. Now, nitro cold brew has gone mainstream and is already one of Starbucks’ best-selling drinks. Because of this, the company plans to install nitrogen equipment in all of its US stores by 2020.

However, it’s not just high-end coffee shops that are offering this specialty coffee option. Both Dunkin’ Donuts and Wawa convenience stores are beginning to roll out nitro coffee options in their US stores, as well.

What is Nitrogen-Infused (Nitro) Coffee?

While nitrogen-infused coffee may sound new and strange, putting a gas into a beverage has been a common practice for a very long time. Sparkling water, beer, and soda are all beverages infused with carbon dioxide (CO₂).

Nitro coffee is no different, except the CO₂ has been swapped for nitrogen. Nitro coffee is even commonly dispensed from a tap, just like beer.

Why replace CO₂ with nitrogen?

While the refreshing, crisp texture of carbon dioxide is preferred for beverages like soda, sparkling water, and light beer, it doesn’t compliment the flavors of darker, heavier beverages like coffee very well.

Similarly to dark beer, coffee lends itself more toward a thick, creamy, velvety-smooth texture. This is exactly the kind of texture that nitrogen imparts when added to a beverage. Because of this, many dark beers are also served with nitrogen; most notably, the world famous Guinness Stout.

Not only is nitro coffee served from a tap just like beer, many coffee shops also serve nitro coffee in a beer glass.

The creamy texture of nitrogen-infused beverages is an illusion created by the incredibly tiny bubbles that nitrogen creates.

One big benefit of nitrogen-infused beverages is that you can achieve the same creamy texture that was once only possible with milk or creamer, without any of the calories.


How Frozen Nitro Coffee is Made

When this mixture is dispensed into a cup, the pressure is released, allowing ice crystals to rapidly form and expand, giving frozen carbonated beverages their signature, fluffy, foam-like consistency and crisp texture that customers have grown to know and love.

Frozen nitro beverages are similar, except they provide a much smoother, creamier texture. To make a frozen nitro beverage, you simply add nitrogen to the machine, instead of CO₂.
